Mitchell's Introductory Wine Appreciation Course Autumn 2005 (Kildare Street)

Mitchell & Son Wine Merchants are delighted to announce the details of their Introductory Wine Appreciation Course to be held at Mitchell's Wine Shop, 21 Kildare Street during Autumn 2005.

  • The course will run every Tuesday for 6 weeks, commencing 13th September 2005 through to 18th October 2005. A light supper and a glass of wine will be served after each class.
  • Places on the course are strictly limited to 32, ensuring all participants are comfortable and that there is time for questions.
  • © Riedel Glasses are used throughout the wine course for all tastings and each participant will receive two complementary Riedel Chianti Classico crystal glasses
  • All classes are held at Mitchell's Wine Shop, 21 Kildare Street, Dublin 2 and will commence at 7.30 pm sharp.
  • All participants will be entitled to order the wines tasted on the course at a 12% discount on a one-off basis for a limited period, and an order form for all wines will be distributed on the final night.

As the consumption of wine in Ireland continues to grow, so too does the demand for information about wine. The aim of Mitchell's Introductory Wine Course is to help participants get to grips with what is on offer in the Irish wine market, and how to get the best from a bottle of wine. Myths are challenged, prejudices are confronted, and all proceedings take place in a relaxed and sociable atmosphere. There is a strong emphasis on tasting, as we believe that this is the best way to learn about wine.

Course Programme

Class No. 1:
Tuesday 13th September
An Introduction To Wine

A short history of winemaking, an introductory session of tasting and a structured approach to writing tasting notes, needed for the rest of the course.
Wine Tasting: A variety of wines from Europe and the New World

Class No. 2:
Tuesday 20th September
How Wine Is Made

From vine to bottle, all aspects of viticulture and vinification. An illustration of the gulf between the romantic notion of winemaking and the reality!
Wine Tasting: A selection of wines showing obvious production characteristics.

Class No. 3:
Tuesday 27th September
Major Grape Varieties

An introduction to the major grape varieties of the world - Chardonnay, Sauvignon Blanc, Chenin Blanc, Gewurtraminer and Riesling in white; Cabernet Sauvignon, Merlot, Syrah (Shiraz), Pinot Noir, Sangiovese and Tempranillo in red.
Wine Tasting: A selection of wines showing obvious varietal characteristics.

Class No. 4:
Tuesday 4th October
Labelling, Vintages & Classification Systems

Breaking the code, the importance of the label and how to read it. Why vintages are important, classification systems used in the different wine producing regions.
Wine Tasting: A selection of wines to illustrate the points made.

Class No. 5:
Tuesday 11th October
Sparkling, Fortified and Dessert Wines

The various styles of sparkling, fortified and dessert wines available, and the production methods used to make them. The classics - Champagne, Port, Sherry and Sauternes, and some of the lesser known and newer wines available on the market.
Wine Tasting: A selection of sparkling, fortified and dessert wines.

Class No. 6:
Tuesday 18th October
Storing and Serving Wine

Wine storage, proper treatment of wine, food and wine, glassware. Wine Tasting: A selection of wines to illustrate the points made.
Conclusion and presentation of Course Completion Certificates

Mitchell's Introductory Wine Appreciation Course January 2006 (Glasthule Road)

Mitchell & Son Wine Merchants are delighted to announce the details of their Introductory Wine Appreciation Course to be held at Mitchell's Wine Shop, 54 Glasthule Road during January/Febuary 2006.

  • The course will run six consecutive Monday nights, starting on Monday 16th January until Monday, 20th of Febuary.
  • The course fee is €240.00, which includes all notes, wines tasted at each class, as well as supper on the final night.
  • Places on the course are strictly limited to 18, ensuring all participants are comfortable and that there is time for questions.
  • All classes are held at Mitchell's Wine Shop, 54 Glasthule Road, Sandycove and will commence at 7.30 pm sharp. The lecture tasting usually finishes at about 9:45 pm.
  • Participants are kindly requested to be punctual, as late arrivals can cause considerable disruption to the class once started.
  • All participants will be entitled to order the wines tasted on the course at a 10% discount on a one-off basis for a limited period, and an order form for all wines will be distributed on the final night.

Course Programme

Class No. 1:
Monday 16th January
Wine Tasting Techniques

We start the course off by learning to get the most from the glass of wine in front of you. We examine why wines taste as they do, and look at tasting from as objective a view as possible. We learn how to write structured tasting notes, recording the appearance, nose and palate of the wines tasted.

Class No. 2:
Monday 23rd January
Principal White Grape Varieties

We discover the principles behind white wine making, followed by a study of six impotant white grape varieties - Chardonnay, Sauvignon Blanc, Riesling, Semillion, Viognier and Gewurztraminer.

Class No. 3:
Monday 30th January
Principal Red Grape Varieties

Red winemaking is examined along with six of the most important red grape varieties - Cabernet Sauvignon, Merlot, Pinot noir, Syrah, Tempranillo and Sangiovese.

Class No. 4:
Monday 6th Febuary
Off the Beaten Track

The world of wine is becoming increasingly homogenised, so here we look at the lesser-known gems from around the world. As we believe that good winemaking starts in the vineyard, we outline the basics of viticulture - the science of grape growing.

Class No. 5:
Monday 13th Febuary
Breaking the Code

The plethora of labels, appellations and grape varieties can be baffling to the consumer. This session explains the thinking (and in some cases warped logic) behind some of the systems in use to describe wine in the bottle.

Monday 20th Febuary
Storing and Serving Wine
Matching Food and Wine

How to look after your precious liquid assets. Common mistakes in storing wine. Serving red and white wines. A practical exercise in matching food and wine.
We strongly advise you to leave your car at home for this class!
